I know this post is a couple years old, but I found this recipe through Pinterest recently and tried it out on my boyfriend this past weekend. Not only was my dinner visually beautiful (the hens were cooked to golden perfection!), they were tasty and juicy and flavorful. My bf was thoroughly impressed and it was the perfect late-October dinner for a cozy Saturday night in. Chicken is great and all, but next time you cook, it’s time for you to think outside the cluck. No, we don’t mean turkey, and we don’t mean duck or goose either.
First, prep the cornish hens by rinsing them and then patting them dry. When roasting, never open the oven door to check to see “how things are going” more than you have to. You’re allowed one time and that’s it. You let all the heat out when you open the door, and that really messes with the cooking process. If you save bacon grease after cooking bacon, this is a recipe where you can put it to use! Swap out olive oil for leftover bacon grease and bring on the subtle but nice added flavor.

Like I was saying, this last stage is just to get the breast skin nice and crispy. So keep your eye on them as they roast. Check them after 10 minutes and see how they look. You may have to rotate them in order to get even browning. As you can tell from the picture, my oven is old and crappy because the browning is so uneven.
